Brown Stew Chicken with Pineapples

A brown stew chicken with pineapples dish is always going to be an interesting and nutritious one. We already know that chicken is a very good source of protein amongst other essential nutrients, and with your pineapple added, this is definitely a plus.

Pineapple, also known as "ananas" is a very popular fruit and is a very good source of vitamins A and C. Vitamin A is very good in maintaining healthy membranes and a healthy vision.

Regular consumption of foods rich in vitamin C is also necessary to boost your immune system so your body will be able to put up a resistant against diseases. Pineapple also is a good source of thiamin, riboflavin, copper, potassium and manganese.

So all you have to do is to add your starch to make this dish complete. The choice is always yours, but its great with plain rice. Also a very saucy way to prepare your chicken.

BROWN STEW CHICKEN (with pineapples)

Makes 2-4 Servings


4 chicken breasts (cut in 3 pieces each)
1 cup pineapple slices
1 tbsp vegetable oil
½ cup tomato ketchup
1 ½ cup water
2 stalks escallion, chopped
1 medium onion, chopped
3 garlic cloves, minced
3 springs thyme
1 small sweet pepper, chopped
1 tsp soy sauce
½ tsp food browning
salt and pepper to taste


Step 1: Wash chicken in vinegar and water solution.

Step 2: Drain and place in a medium bowl. Add escallion, onion, thyme, sweet pepper, soy sauce, food browning, salt and pepper, and garlic to chicken. (It is always best to season meat a couple hours before to get the best flavour)

Step 3: Add vegetable oil to large frying pan and allow to heat over medium heat.

Step 4: Place chicken with all the seasoning in heated oil and cover, let steam for 5 minutes.

Step 5: Add water and allow chicken to cook with seasoning. As soon as it is becoming thick (sauce like), add pineapple slices.

Step 6: Allow to simmer until chicken is tender and water becomes a sauce.
