Vegetables in Creamy Cheese Sauce
Vegetables in creamy cheese sauce is without a doubt very healthy and will add great value to your diet. You all know that you can never go wrong by adding vegetables to your diet.
Even though every vegetable is very good for you, broccoli and cauliflower are two of the most favoured as they are said to fight cancer and is loaded with carotenoids and other valuable nutrients.

So in this recipe, you will find quite a few of your favourite vegetables that are packed with the essential vitamins and other nutrients. Added to that is the tasty cheese sauce which gives you calcium, protein, fat and phosphorous.

VEGETABLES IN CREAMY CHEESE SAUCE
Makes 6-8 Servings
INGREDIENTS:
½ lb chopped spinach
½ head small cauliflower cut in medium pieces
½ bunch small broccoli cut in medium pieces
½ cup carrot cut in rounds
½ cup irish potato diced
½ lb string beans
½ of a small zucchini, diced large
INGREDIENTS FOR CHEESE SAUCE:
2 cups light evaporated milk
1 ½ tbsp butter
4 tbsp flour
1 vegetable bouillon cube
1 cup grated cheddar cheese
½ cup grated Parmesan cheese
½ medium onion, diced
2 tsp thyme leaves (gives a nice flavour)
½ tbsp minced garlic
pepper to taste
INSTRUCTIONS:
Step 1: Wash vegetables thoroughly and let drain. Over low heat melt ½ tbsp butter in medium saucepan. Add vegetables and allow to steam for about 7 minutes. Be sure not to allow vegetables to over-steam as it destroys nutrients in some vegetables.
Step 2: In another saucepan melt the remaining 1 tbsp butter over medium heat. Saute garlic, pepper and onion for 2 minutes.
Step 3: Gradually add flour constantly whisking so it blends in with butter. When smooth, whisk in milk. Crumble vegetable bouillon cube, add to mixture, then add both cheese and mix.
Step 4: Cook over medium heat until cheese is melted, stirring constantly so as not to get a lump. When thicken remove from flame.
Step 5: Pour cheese sauce over vegetables. Best served hot.
