Pumpkin juice with carrot

Pumpkin juice with carrot is a classic vegetable meal in a glass. Its always healthy to blend vegetables or fruits for any meal of the day. These two vegetables combined will bring nothing but great health to your diet.

Beta-carotene, which gives some foods that rich bright yellow, orange and red colour is the substance that acts as an antioxidant and is present in pumpkin, thus making it beneficial in decreasing the risk of some cancers. Beta-carotene is also present in carrots, which means you'll be getting a double dose of antioxidant from this recipe.

Not only can these two very popular and highly favoured vegetables be used to make a juice, they can be used to make cakes and breads, soups, cooked by themselves, used in salads, and a lot more. Surely an easy recipe, below you will find the details of this tasty meal in a glass.

PUMPKIN JUICE (with carrots)


2-4 Servings

1 ½ lbs pumpkin washed and cut into chunks
6 large carrots
1 tbsp grated nutmeg
½ tsp grated ginger
2 tbsp vanilla essence
1 cup brown sugar
1 ¼; cups evaporated milk
1 cup Malta
¼ cup plain yogurt

You can use the same amount of condensed milk instead of evaporated milk, but because condensed milk is sweeter, add half the amount of sugar.


Step 1: Boil carrots and pumpkin in reasonable amount of water as it will be needed to blend vegetables, then let both water and vegetables cool.

Step 2: Depending on how large your blender or mixer is, divide your ingredients in half. If your blender can hold everything you don't have to divide.

Step 3: Add pumpkin, carrots and 1 ½ cups of the water used to boil vegetables to blender (that is if you divide the ingredients, if not, use 3 cups), then blend until liquified.

Step 4: Add plain yogurt, nutmeg and ginger and blend just a little more.

Step 5: Pour mixture in a jug adding sugar, Malta, evaporated milk and vanilla essence.

Step 6: Stir well until sugar is dissolved. Taste, and if not sweet to your suit, add sugar as desired
